While waking up to a delicious breakfast is always a highlight of my day, sipping a hot cup of coffee and devouring a warm breakfast are made more special when done in a crisp and chilly autumnal morning.
So, as someone who takes breakfast (and food for that matter) very seriously, I figured I would share my favorite breakfasts for fall time since I’m sure you could all use a little bit of this deliciousness in your life (but if you don’t, you could always use more).
I am happy to say that I have finally found a pancake recipe that is healthy, reliable and so delicious. The secret? Coconut flour. Because I’m feeling nice today, I will share the recipe with you. But, in my opinion, no pancake is complete without a dollop of peanut butter, a drizzle of maple syrup and, in the fall time, a smearing of pumpkin butter.
I think I devoured this breakfast in under five minutes. This time of year, try making your toast like this: top it with cream cheese and then smear some pumpkin butter on top. No joke, it’s like you’re eating pumpkin pie toast. To balance out the sweetness, I like to pair it with some scrambled eggs that feature a little cheese.
Don’t knock this combination ’til you try it, because it is one of my favorites ever. Take some plain Greek yogurt and toss in a handful of berries and a tablespoon of peanut butter. Now here’s the kicker; I love mixing in a Five Seed Almond Bar from Trader Joe’s because adds some hardiness along with the sweet taste of gingerbread. Seriously, these things are amazing and only 110 calories.
First of all, can we all agree that diners are amazing? There is nothing like waking up around 10 a.m. after a long night of dancing with friends and heading to a nearby diner where you devour soft eggs, thick toast and juicy fruit (I don’t think I have to mention that coffee is involved, too). In the fall time, this warm platter makes the perfect comfort food combo to wake up to.
