You know what one of life’s little blessings is? Waking up in the morning and knowing exactly what you want to eat.
Well, my friends, I was handed this little gift yesterday morning when, upon woking up, my stomach was rumbling for only one thing: pancakes.
Yet, given the fact that I am a little bit of a health nut, I knew that I could whip up some pancakes in a clean and healthy way that would still completely satisfy my cravings. So, I made these delectable coconut flour pancakes and started my day in the most delicious way possible.
The fact is that making pancakes from scratch isn’t that hard! It’s really not…I promise!
Pancakes really only require four ingredients, and it’s very likely you are already in possession of them. However, if you are trying to make pancakes that are on the healthy side, it might require a trip to the grocery store.
When baking in a healthy way, I replace tradition flour with either coconut or almond flour, regular sugar for Truvia and even butter for unsweetened applesauce. But, lucky you, these pancakes don’t require any oil or butter.
I happen to have coconut flour in my pantry right now, so that is what I created these babies with! You may be surprised to know that the texture coconut flour creates in a pancake is essentially the same texture regular flour creates. Coconut flour certainly does a better job at replicating the traditional pancake texture than almond meal would.
Another very important component of this recipe is the mix-ins!
I wouldn’t be caught dead eating plain pancakes…can you say boring? Because I like to keep things nutritious, I love adding blueberries into my pancakes, whether they are protein pancakes or these coconut flour ones! Moreover, I regularly top my pancakes with peanut butter, because I think I have an addiction to it…
If you prefer lighter things in the morning, I would suggest adding a dollop of Greek yogurt to these fruity flapjacks.
All and all, the combination of fruit, fluff and salt here should be award-winning. To make things even yummier, drizzle maple syrup on top (I use sugar-free) and BAM–Heaven.
Okay, I’ll stop talking. Here is how you can make these scrumptious, yet nutritious, coconut flour pancakes.
Prep Time: 10 minutes
Cook Time: 10 minutes
Serving size: About 4 pancakes
1/4 cup coconut flour
1 tbs. Truvia
1 tsp. baking soda
2 large eggs
1/4 cup milk (I used almond milk)
1.) On your stove top, spray a pan with oil or butter.
2.) In a mixing bowl, combine the coconut flour, Truvia and baking soda. Mix all together.
3.) Add in the eggs and stir. Then add in the milk and stir.
4.) Thoroughly mix all of the ingredients together.
5.) Starting scooping the batter out of the bowl and onto the stove top, creating pancakes that are to your size preference. At this point, add in whatever mix-ins you would like. Flip the pancake when the bottom side is golden brown. Repeat until all the batter has been used.
