Sure, my friends my classify may classify me and funny, stylish, beautiful and smart (lol, that was sarcastic), but above all of that, I have come to be known for my unwavering love of peanut butter.
Ever since elementary school, people would catch me dipping a spoon into a jar of raw Jif peanut butter with the biggest smile on my face. #happiness. I put peanut butter in my oatmeal in the morning, snack on peanuts throughout the day, mix it into Greek yogurt for a snack and even put it on top of chocolate for a dessert. Would you say I’m addicted? Maybe…
But, I wanted to switch up my peanut butter habits for a sec and put together these peanut butter brownies the other day. Let me say, they were delicious.
What’s even better than the fact that they were delicious? They only require three ingredients: egg, almond flour and, of course, peanut butter. But to sweeten them up a little bit, I added in some vanilla extract and white chocolate chips. If you have a sweet tooth like I do, I highly recommend doing this.
Prep time: 10
Cook time: 10-15
Serving size: 6 brownies
250 grams of crunchy or smooth peanut butter
1/4 cup of almond flour
Optional: White chocolate chips
Optional: 1 tablespoon of vanilla extract
Optional: 2 packets of Truvia, or another sweetener
1.) Preheat the oven to 360 degrees Fahrenheit.
2.) Pour the peanut butter into a mixing bowl.
3.) Stir in the egg and the almond flour.
4.) Mix in the optional vanilla extract and/or sweetener and/or white chocolate chips.
5.) Place the batter into a greased oven tin and place into the oven. Let cook for approximately 12 minutes and then remove.
